Stilton is in Leicestershire but Stilton cheese can be Leicester Derbyshire and Notts
Sorry Stilton is in Cambridgeshire now so cannot produce Stilton cheese

Hi Tenter, thanks for replies. I cant decide where it is 'traditionally made'
There only 7 dairies registered to make Stilton 6 are on Notts Leicester border and one in Derbyshire at Hartington.
This was only allowed because it was owned by a dairy in Leicester.
I would suggest that Leicestershire is the most likely single answer.

Tenter, thanks very much for the help you have given, it is much appreciated. J
Wondered about the Vale of Belvoir - At present, all but one of the licenced dairies are based in the Vale of Belvoir, which straddles the Nottinghamshire-Leicestershire border. This area is commonly regarded as the heartland of stilton production, with dairies located in the villages of Colston Bassett, Cropwell Bishop and Long Clawson. The only current dairy producing stilton elsewhere (at Hartington in Derbyshire) owes this fact to a native of the Vale who bought the dairy over a century ago.
Question Author
Thanks for your reply bookwormer, it certainly is a tricky question, and I think 'traditional' is the key word.
Sorry, just seen the word county, so can't be right!
The Centuries of Stilton™
Stilton was first made in the early 18th century in the midlands of England. Specifically in and around the Melton Mowbray area. which is in Leicestershire
