mini meringues (various flavours, can fill with plain cream, flavoured cream or dulce de leche)

Thats just off the top of my head.
I would suggest you go to an online catering supplies company for any equipment you need.
Personally if you are doing food for that lot, I'd delegate EVERYTHING else. I did a wedding for 60 in the summer, I've only just recovered.
