I am proposing to make a couple of Bellinis using Archers schapps and Champagne and adding a slice of peach in each.Is this recipe OK........I've found many confusing ones on the internet so I hope mine is acceptable.
Any comments ?

The Bellini:~
Served for the first time in 1948 by Giuseppe Cipriani, founder of Harry's Bar in Venice, juice of white peaches and Italian Prosecco wine

You CAN use Champagne but Prosecco (cheaper but sparkling) is more usual.

I feel the schnapps might overpower the wine and peaches as it's meant to be a subtle drink.
The genuine Bellini uses peach JUICE(although a slice of peach can be used for decoration)
The only problem using peaches in February is that they may be flavourless or just plain unripe. Also WHITE peaches are used in the original, as they have a very subtle but intense peach flavour, but standard peaches would do.

Thanks for the advice Mr Veritas...however your reply came after the event, but most appreciated.
As regards the cocktail, you are right.....the resulting concoction I felt was unpleasant but my wife found it OK.
Later,I mixed Archers schapps with lemonade out of interest ,also with soda but both tasted awful.I think this bottle of schnapps will sit in the back of my drinks cupboard fot some considerable time !!
There are many other Champagne cocktails to try so I shall keep sampling !
