Does anyone know a recipe for the white custard that they used to serve in schools.

I havent had it since primary school, and have never forgotten its creamy taste..

A lot of vanilla custard is quite light.

No, it was definitely not custard as such, but always had little bubbles, leading me to think it was whisked with something else, and it was white not yellow always served cold

oh yes white sauce, we used to have it with chocolate sponge pudding at school.
Defintely white pouring custard, we used to have it with chocolate pudding, it was like custard they'd forgotten to put the yellow in.
I wonder if this was whisked evaporated milk. If you chill it in the fridge and whisk with a hand whisk it goes thick and creamy like you describe. Incidentally, you can make a lovely mousse by adding a jelly made up with as little water as possible and leaving to set. Enjoy!

We used to get that as well. I didn't like it that much and it was always much thinner than custard.
No egg yolks in a white dessert sauce.
You can get it in tubs in the fridge in supermarkets at Christmas.

You could try this cornflower based recipe.

Traditional Sweet White Sauce

Ingredients
300 ml of milk
28g butter or margarine
20g cornflour
1 teaspoon of sugar

Method
(1) Melt the butter or margarine into a saucepan. Remove from heat and blend in the cornflour.

(2) Stir in the milk gradually, and add the sugar.

(3) Bring to the boil and simmer for 2-3 minutes, stirring constantly.

(4) Add seasonal spirits to taste (Rum, Whisky etc.) if required, depending on the occassion.
think it was white sauce!.............just a rue made of butter and plain flour, heated, then you add the milk, boil till thickened, and simmer for few mins, lovely creamy white sauce!

I hated it and I also hated the chocolate pudding. I don't like custard either!!
I would be inclined to add a couple of drops of vanilla essence as well.

or almond essence if preferred.

I doubt in the schools used butter!!

Probably just milk, cornflour, sugar and vanilla essence. Fat would make it heavier.
