Can anyone give me a few desserts which are nice but easy to make also?

Trifle, Banoffee pie, Crumbles, Cheesecakes, fruit tarts or flans

All the above are pretty simple and can be made using basic recipes from cookbooks or online
That black forest trifle on the first BBC link that Chris put on above is going to get made.
Eton Mess is easy - strawberries, meringue, cream - chuck in a bowl and stir.
Lemon posset ... google the recipe but it's just a matter of boiling up cream sugar and lemon juice .... old Victorian recipe - serve with shortbread biscuits ... either home made or cheating ones!!! Shortbread is easy too - just use a 3-2-1 ratio of flour, butter and sugar (ie 6oz plain flour, 4oz butter and 2oz sugar) so very easy. There is a lemon posset recipe here, but I would stick with the easier shortbread recipe above:
