I implore you to only answer the exam question here, I know what I could do but I want to know what I CAN do.
I am going to have at least two under ripe avocados to cook with at a demonstration. I have very limited equipment and a soup or pureed solution is not possible. Does anyone have a recipe for using under ripe avocados?
I know the useful answers are going to be few and far between, but I thought I'd give it a go.
...Then peel it, cut in sturdy slices (removing pit which you could then grow) place slices in a heavy frying pan with a little EVOO and fry for about 3 minutes over medium heat or until it becomes as soft as ripened avocado. Use as usual for salads or other dishes. Tastes great...
The only interesting things I found in my cookbooks were: Cranberry-avocado salad, half shells with cold lobster salad or half shells with curry. I looked through about 25 cookbooks because the question intrigued me. Clanad's suggestion was better than anything else I saw.
Thanks Cowtipper, I suspect there is a very good reason why we can't find recipes for under ripe avocados ;-)
I'm going to have a go at Clanads idea, my fritter idea and see what a guacamole with coarsely grated avocado and chopped tomato/onion/chilli turn out like.
I started in the pickling books because I thought the firmness might be to your advantage (the only advantage I see for under-ripe ones). I'd need to play with one but its an hour drive to the grocery store from here. Let us know how the guacamole turns out.

Tempura batter is a nice idea but I can't do deep frying as disposing of a large quantity of hot oil is a tad difficult, hence my thinking on a polenta crust that can be done shallow fried.
TBH, I don't have a whole lot of of hope for coarsely grated guac, but hey it's worth a try!
i like underripe avocados. when they arrive wrap them in newspaper and leave them for as long as poss. or i remember seeing someone do baked avodcado's once, looked rank but may work
