a few years ago I used to salt runner beans to store them. They faired well with ordinary table salt, if that info is any help to you!

Saltpeter, the same that used in gunpower, and fertalizer is the orginal salt used for pickling meats like corned beef and pork etc, but now days they us other nitrates that are more consisten.

Course sea salt would be as good as anything just get the consentration right and you will be fine.
