how do i stop mushrooms shrinking when frying?

easy bypass frying pan into bin
Don't over cook them...
Mushrooms have a lot of water in them-which is released when they are fried/sautéed. Hence the shrinkage. Try frying them gently so some liquid stays in the pan-it may help.
parboil them for a couple of minutes first.
Whereas I find it better to fry them in a hot pan to sort of seal them....then turn it down.

I prefer my mushrooms baked...I'm having them with dinner tonight. Do you want to come fluff? Jelly and ice cream for pud :-)

keep them moist by cooking in a pan with a lid...

yeh put them in water first to soak up a bit of water - or get some of that mushroom ketchup - its more like brown water but tastes lovely...i soak them in that

First they have to travel the route of the trouser leg.... ask fluffs
I've never seen it. Where would you get that from?

The mushrooms soaked in water/fried gently/with a lid....wouldn't they be more like braised mushrooms? I know not much difference....
Dont fry them.

Put them in a bowl with a lump of butter and microwave them, much nicer.
