Salad....yawn.

I am trying to avoid bread, pasta, rice etc and have been very good all this week and stuck to salads for lunch. So far:
Italian leaves with chorizio, caramelised onions, poached eggs & balsamic dressing.
Yesterday rocket with feta, peashoots, peas & mint.
Then today Italian leaves with chicken, parmesan, onion, cherry toms & balsamic.

Any other suggestions? I cannot stand the though of just lettuce, tomato & cucumber boring old-fashioned english standard salad.

The only bananas I consume my dear old geezer, are in daquiris........ ;-)
Sunblush Tomatoes.
Olives - if you can get the ones stuffed with anchovies, they are delicious (I try and avoid the ones my neighbour has lobbed over my garden wall).
Gherkins.
Alfafa.
Lollo Rosso lettuce leaves mixed with spinach and watercress.
And if you are feeling brave, some pickled chillies.

It goes with anything................Damn ! Now I'm peckish.
Drizzle with a little balsamic vinegar and olive oil.

tandoori chicken salad
pieces of tandoori chicken (make your own with chicken breast or buy ready done bits). in a bowl put some mange tout, a head of chicory, curly endive, watercress, 1 mango peeled and chopped and 1 orange peeled and segmented. mix together 3 tblspns low cal mayo, 2 tbspns orange juice and i tsp finely grated orange rind. add to salad and toss gently. mix in chopped chicken and sprinkle with flaked almonds.

Bugger, this thread has made my stomach rumble so much I've just scoffed a Cafe Nero double chocolate brownie.

When I was trying to be healthy and take salads to work, I would make up a normal salad and then get the tubs of sandwich fillers from the supermarket (being extra lazy!) an had that with it, was really nice!
Ham, walnut & fig in a honey, olive oil and apple-cider vinegar dressing dumped on top of a pile of spinach & bitter leaves (can't remember what they're called actually...)

Apologies if I've repeated someone else's.
I hate the old fashioned idea of Salad - Plain lettuce, cucumber, tomato, beetroot and hard boiled eggs with salad cream!! It's funny how so many people that is what salad is!!

The other day I had dates and walnuts with mixed leaves with some wafer thin ham with some balsamic dressing - was really nice.

Do you like cottage cheese with pineapple?

I don't mind cottage cheese lottie, but don't like fruit in it.

Thanks everyone for all your suggestions. I have plenty of ideas now. (Forgive me for the brownie.....)
I like Ed's suggestion.

I also use cashew nuts a lot in salad.
I have been informed by a source close to the salad that can be improved with the following:

Pecan nuts
Pomegranate

(and the bitter leaves were rocket!)

Spare
I never think of rocket as being bitter....more peppery really.
