This is about as authentic as it gets. The sponge should be fatless, that is whisk eggs and sugar until creamy (best off using a food mixer unless you have a very strong non-tiring arm. Kirsch is made from the distillation of morellos, a dark, very sour cherry found in the Black Forest region of Germany. The cherries are fermented whole, rather than being pitted. Kirsch is aged in an ash barrel, or not aged at all, which is what gives the drink its clear complexion. Brandy is usually a grape based spirit with added fermented flavours and is red in colour.
