I emailed Phil directly through his website, this is what was sent back. I've already got mine in the freezer almost ready to go and it's great so i thought i'd share.
CHEATS ICE CREAM
6 persons
Preparation time:- 15 minutes.
Cooking time:- None.
1 tbsp vanilla extract
300g carton of ready-made (shelf stable) good quality custard
4 tbsp Golden Syrup
500mls of double cream, lightly whipped, don’t go mad
Mix the vanilla extract with the custard, along with the Golden Syrup.
Add the cream and gently whisk together.
Place into a large ish plastic container, so you end up with say 2-3cm deep (this will freeze quicker) then freeze for 40-45 minutes.
Remove and gently whisk or beat with a fork.
Re freeze for a further 45-50 minutes, re beat and add the flavourings you want.
Re freeze, lid on ‘til ready.
If the ice cream is too firm, add a little more Golden Syrup.
