Doing dinner tomorrow night for myself, my mother and OH's parents (OH working). It's the parents' first introduction.
3 meat eaters, 1 vegetarian.
or
4 fish lovers but 1 hates salmon.
I want to cook something impressive, but don't want to spend all day in the kitchen.
Would appreciate any suggestions.

Cook a chicken with herbs, garlic butter, fresh lemon dress it up on the table with watercress and fresh herbs, lemon wedges etc, a nice fresh crisp salad, jacket potatoes, or noodles and /or some good sour dough rustic bread and for the veggie, just put a quorn fillet in the oven the last twenty minutes with the same herby garlicky lemon saucey dressing over it.
