I've just finished making a fresh passionfruit, mango, peach and lime cheesecake with a oatie hob-nob biscuit base, and even if I do say so myself, it's yummy!
Other cheesecakes I make regularly are strawberry, raspberry, lemon/lime, blackcurrant, malibu and pineapple, Baileys and chocolate, and mandarin orange. Sometimes I use digestive biscuits, sometimes 'hob-nobs' and sometimes for a change I use ginger biscuits as the base.

Hi Jan - (sends cyber hugs) I make the citrussy one after a spicy meal - cleans the palette. The malibu one I made as a present for a friend who loved the cocktail Pina Colada - malibu and pineapple juice - she loved it and it was a firm favourie when I had my catering business. Weird this one,but it was on Britains Best Dish. Carrot Cake Cheesecake. You make the carrot cake base,bake for 8 minutes only and pour the cheesecake mix on top..before finishing the baking time...it sounds bizarre but is gorgeous.

1lb of cream cheese and a pint of whipping cream around 2 tablespoons of sugar (depends on what topping I'm using - if the fruit is tart, I'll use more, if it's sweet, less or none. In a mixer slowly beat the cream cheese, add any flavourings such as booze or lemon zest, sugar, essences or melted chocolate here. Then whip the cream until stiff and gently add to cheese mixture. Put onto prepared base (crushed biscuits mixed with melted butter) I always make mine in a loose bottomed spring-sided tin. even off top and put in the fridge overnight to set. Add topping and serve. If serving a chocolate cheesecake, in fact anything chocolate, like a chocolate tart or mousse, it's nice to serve a few red berries. Zillions of calories yes, but very nice for a treat!
I made one the other week with some fresh lemons and limes from Trinidad - the oil in the zest was just beautiful - I grated it all off and froze it in ice cubes of the juice so it will still be in it's prime next time I use it. The passionfruit is quite tart, but the mango and peach is sweet, the lime just cuts that sweetness to make it just right.
