I skinless boneless chicken breast
or 200g pork fillet
I jar smooth peanut butter
I can coconut milk
chili sauce
soy sauce
lemon juice
1 onion
1 clove garlic
1 teaspoon sweetner
Fry onion and garlic in a little oil till just beginning to colour, drain and discard oil. Add threee tablespoons of peanut butter, 6 of coconut milk, 1 tablespoon each of lemon juice and soy sauce, sweetner and add chilli sauce to taste.
Put two thirds of the sauce to one side and marinate the meat in the remaining third for a few hours. thread thinly sliced meat onto skewers, grill for 10-12 mins till cooked through serve with egg fried rice and remaining sauce
