Trying to convince the boys that we need to eat less meat. Any tried and tested recipes for veggie food that doesn't make you feel that you're missing something?

Archer....that actually sounds really nice. I'll give that one a go....
i buy dried beans - all types, and soak overniight.
wash well then boil for ten mins.
bung in the slow cooker with chopped:
celery
onion
garlic
sliced peppers if you have them
chilli powder
smoked paprika
bit oregano
squidge of tomato paste
2 tins of tomatoes
and a tin of baked beans (these will season for you)
put on low for 6-8 hours while you're at work.
we eat with
crusty bread
potato wedges
rice
cheesy garlic bread
tacos/tortillas with salad and soured cream
depending on the mood.
i have to make tons of this as it freezes really well and reheats the next day too. my hubby is a true carnivore but he loves it.
(If you're in a hurry use tinned beans but they are much more expensive than the dried.
ummmm. Let me know what you all think of it if you do make it. I hope you enjoy it - I'm very proud of it!
