Alternatively, mix equal quantities of cream cheese and lemon curd. Splodge it into a ready-made sweet pastry case then cover the top with fresh fruit of your choice. (raspberries are very good) . Quick dusting of icing sugar before you take it to the table. Instant cheesecake.
Eton mess, with strawberries and raspberries, similar to the Pavlova suggested, but quicker - just crumble up shopbought meringues, mix with whipped cream and fruit, and serve.
Open a tin of Mango's, drain.Puree Mangos in food processor or liquidizer. Set aside a little. Fold into thickened cream( you can even buy ready thickened whipping cream in a carton) Spoon into ramkins or wine glasses . Drizzle a little of the remaining puree on top. Pay fry in a little butter sliced almonds until golden brown. Sprinkle on top. All takes less than 5 mins. Nice and light and refreshing.
You can do something similar to the cheesecake with mascarpone cheese (two small tubs) 1 lime juice with half the zest in with the mascarpone and 1 tabs of icing sugar mix well. You can make a digestive biscuit case or use pastry. Then chill. Sprinkle the rest of the zest on top. This is very rich and very yummy.

Hot fruit salad. Get tins of white fruit like apples and pears and lychees, buy white/green grapes and slice up a couple of bananas thickly. Put it all in an ovenproof dish with all the juices and a spoon or two of brown sugar and quite a bit of brandy.
It can sit for a couple of hours waiting, and it can be cooked in the oven while other things are cooking.
While it stands, make sure the bits of banana are all under the liquid.
Get the stuff hot and pour some more hot and flaming brandy over it so you can serve it all in flames. Dim the room-lights. Handle carefully !!!
