Coconut dilemma!!!

Ever since my husband won a coconut at a local fete two months ago, it has been rattling round my fridge. Left to my own resorts, I would throw it out but he is dead chuffed with winning it and thought we could use it in a recipe. Any (sensible!!) ideas to use it up, please?
P.S. As a last resort, will the birds eat it?

Take a large nail and hammer it into each of the three weak spots at the pointy end, to make holes - drain out the juice and drink it. Then hit the coconut with a large hammer so it shatters, then grate it and eat it.
It shouldn't have gone off - most coconuts stay fresh for ages because they are in a sealed container.

Thanks to you all. I've got so many suggestions now that we had better go to another fete and win some more!!! (I've decided to do the banana milk thing and make a chicken dansak with some pineapple and coconut then maybe a coconut cake - or I might crack open another bottle of wine and put the coconut out for the birds) SORTED!!
Once the flesh is out, using a speed peeler, shave the flesh in strips. lay them out on a cake cooling rack and put in the airing cupboard for as long as it takes to dry out and become crispy (usually a couple of days). store in an air tight container. Use as cake decoration or just eat it as a snack.
