Parsnip is my favourite but its a bit early for parsnips yet. Save them for the winter and try this seasonal courgette soup.

Kilo to a kilo and a half of good (sweet) onions, chopped and some diced, and sweat down with a large dollop of butter, a smidge of sugar if they need to brown - garlic cloves in (optional but I do).
Loads of fresh ground black pepper and then pour in a glass of sherry and a glass of noilly prat and let stew for a few mins.
Add one pt five to two litres of a good stock (pref homemade chicken or beef) and let simmer for forty five minutes to an hour, even better let it then sit there overnight. At the least prepare mid afternoon before a dinner party and reheat prior to service
Toast of croutons and a good sticky cheese like an emmenthal and add them to the dish on serving - or cover pot bowls with puff pastry......
(and wait for it to take effect two to three hours later!)
