Melting Moments
We used to have this as a pud in primary school mumble mumble years ago. They were sort of oaty biscuit with a really lovely, light texture. Found myself dreaming about them yesterday and wonder if anyone else remembers them or has a recipe?

I went to a convent boarding school and we didn't get anything like this for pudding..I digress though....will dig it out tomorrow for you both - it's a bit late now and the house alarm's on and ...well, you get the picture!! Will post recipe tomorrow!

Ok you ready for this??!!
2 1/2 oz SR flour, 1 oz castor sugar, 1/2 tsp vanilla essence, 2 oz butter and a little dessicated coconut.
Turn oven on to 180 C/Gas 4.
Cream the sugar, butter and essence and then stir int he flour and mix well. With wet hands roll into balls and then roll in the coconut. Place on a baking sheet and flatten slightly. Bake until slightly brown. (about 15-20 mins)
