Hey, Im cooking salmon tonight for dinner...any suggestions of a good recipe, I usually just steam it in foil and serve it with veg but fancy something a bit more exciting??! Thanks :)

Salmon fillets or a whole salmon?
Sweet chili sauce over it

I tried this a few weeks back as I had run out of ideas and must say it tasted yum!
If it's skin on fillet, I usually fry it and finish it off in the oven. Goes nice with roasted veg and a sweet spicy sauce...like OJ suggested.
two simple but tasty recipes:

1) make a glaze in proportions> 2 tablespoons orange marmalade, 1 tablespoon soy sauce, 1 clove minced garlic; spread over salmon fillets and bake.

2) marinade consists of:

2T soy sauce
2T dry sherry
1 T brown sugar
1 T minced ginger root
2 cloves minced garlic
2 T onion, minced

marinate for up to an hour; grill.

Try it with the cook in the bag mix. You can also add your veg as well in the bag if you want.

I smash a clove of garlic on mine with a sprinkling of Paprika then cover and cook in microwave for a few minutes.
If you have a pan that's not non-stick...Heat the pan till it's really hot and drops of water will roll about in little sizzling balls. Put in a drop or two of cooking oil, and smear it over the inside of the pan using a paper kitchen towel. Place the salmon in the pan exactly where you want it, ('cos it'll stick!). Lower the heat a bit. After a few minutes, shake the pan from time to time till the salmon unsticks and moves about freely. Then, (and only then), turn it, and do the other side. Result - crispy-crunchy on the outside, moist in the middle. Nice.
Ok - too late for your occation - but for future - I mix crushed prawn cocktail crisps with bread crumbs and butter and use that to coat fish. Oven till cooked. My OH and me not too keen on that flavour crisp so is a good way to use from multi packs.
