Full course banquet ideas

Does anyone know of a good book which would help me and my friend plan a banquet for 20 odd people later this year? It will be several courses (6 or 7) - there are bits and pieces on the www but we really want "The Idiot's Guide to Planning a Banquet"! We're not sure on the order of courses (we've a rough idea) and whether there are any real "do nots". Eg, we don't know what would be appropriate for a small fish course, or whether we do a consomme course etc.

A 7 course meal should be:
1. Appetiser
2. Soup
3. Salad
4. Fish course
5. Main course
6. Pudding
7. Cheese

I've had a good hunt on t'internet and can't find any such book.
If you want any recipes for any of the courses, let me know - I have dozens of cookery books
You might have to go to the Library or get these second-hand, since they are quite old.
The "Good Food Guide" produced at least 2 "Dinner Party Books" with a lot of full menus for full dinner parties, and you could easily multiply up to get courses for 20 people. There are explanations and suggestions for wines, and timings for which course goes in the oven first ( for example).

As you can probably guess, I have had both books for quite a long time, and still use them.
