We have an old mate from work coming round for dinner on Friday with his wife and we are looking for some super tasty menu ideas!
As far as I know my mate will eat anything, but his wife is a vegan, which is not a problem at all and looking forward to the challange, but have no idea where to start!
I made a tomato soup couple of months back for my family as a starter and they said it was gorgeous, but other then that we are pretty stumped!
My OH who does a majority of the cooking is pretty adventurous and a very good cook, so any tried and tested recipes would be great!
Curries (mushroom/chickpea/lentil) and sides with spinach/potatos/rice/cauliflower etc... or stirfries (eg posh mushrooms) are ideas too. If you are near a city with supermarkets with foreign foods then you could do something more adventurous - I love the chinese supermarkets round here for stuff.
Roasted vegetable kebabs is another idea too.
Ooh and spun sugar baskets are adventurous (always wanted one haha!) with a fruit salad and maybe a coulis style sauce. Or a nice fruit compote or crumble.
Tasty suggestions there from Jenna, I eat alot of stir fries and sometimes throw in some cashew nuts for good measure. The stuffed peppers are delicious and depending on the style of your evening you could have a couple of chunky chips with them too.
Other suggestions are mediterranean risotto, tomato and mushroom pancakes, falafel burgers or more ideas here,,,,,,,,

We wanted to go for something that we would all have and actually do a veggie meal rather then something with quorn or whatever in.
I have found a veggie meal in one of my slow cooker. Poke for a 5 a day ravine with carrots, parsnips, onions and peppers slow cooked with spices in chopped tomatoes that it says to serve with jacket potato or Cous cous which looks rather tasty and may do quite well!
Not been a vegan for quite a while now but there are some lovely recipes you can make using good fresh natural fruit, veg, etc... without the need to resort to substitutes.
How lovely of you to have a vegan meal for everyone. Your recipe sound good and you could serve it with purple-sprouting which is in peak season at the moment.
