I need to make a cake tonight.. and have just realised I have no eggs!! So looked up egg free cakes, but they all need vinegar. I only have balsamic.. will this do.. or just not work and taste awful..

Would a fruit loaf be okay?
I was in the same situation and found a recipe for a fruit cake. It was delicious and a huge success. Stay there I'll get it. (No vinegar involved)

Any cake would be fine.. only have fresh fruit though.. and some apricots.. would those do...
I don't think that's going to work, sure it'll affect the taste badly!.......I have a recipe for a fruit loaf/cake which needs neither, but does need golden syrup, if this helps, let me know, and I'll post it for you, it's very easy to make and taste delicious!...............
mine needs dried fruit too sorry, so won't be of any help to you whatwhat, sorry!........

215g sultanas (or mixed dried fruit)
200g caster sugar
15g butter
250ml water
1tsp mixed spice
1/2tsp nutmeg
1/2tsp cinnamon
250g plain flour
1tsp bicarb of soda

Place the fruit, sugar, butter and spices in the water and simmer in a pan for 5-7 minutes. Remove from heat and cool.
Sift in the flour and bicarb. Stir well.
Pour into a loaf tin (greased and lined) and bake for 1hr at 160 degrees C or until skewer comes out clean.
just had a thought, I think if you can find a recipe for Angel Cake, that may work, sure it doesn't contain eggs, worth a look!.........

Ok no fruit!

How about this egg free chocolate cake?

1 cup self raising flour
1 cup oats
1 cup dried fruit
1 cup sugar
1 cup milk

Mix all together and bake in a loaf tin for 60 to 75 mins at 180 Centigrade (Mark 5 )
Use a big mug for a big loaf and a smaller cup for a smaller loaf.
Easy but good.
Actually 180 may be a bit high, try 170
have a look on www.recipehub.com there's a recipe there for Angel's Food Cake, may be ok!..............

or lots of eggs... just looked up angel cakes and they needed 20!!!! 20 eggs.. who has 20 eggs!!! Thanks for all your help everyone.. think I will just have to go and buy one in the morning... not so nice or thoughtful.. but much less stressful for 9.30 at night!!

Can't blame you really, it is getting a bit late for improvised baking! I'd rather get up an hour early and go to the supermarket for a ready made.
Don't know - perhaps if you chop it into small pieces and maybe use a little less milk. Actually, may try that myself, could be nice.
if you ever need to substitute an egg,you can use a banana
my favourite one is
8oz sr flour
3os marg
1oz sugar
milk or water to mix
voila egg free scones!
do not be misled by the simplicity of this recipe
i guarantee nobody will be able to tell that it doesnt contain eggs
let us know how they turn out
whatwhat, recipes I found for angel cake did not containn any eggs!......byt getting too late to bake now, so I agree, get up early and just buy a cake!......lol................
