I have 1.4kg of strawberries (hulled). How much sugar and lemon juice do I need to make jam? Thanks x

You'll have to adjust the quantity of sugar and lemon as needed

Brilliant Nibble, thank you so much. I've made other jams before but never strawberry as it's supposedly difficult to set. Fingers crossed it turns out ok!
Try using the sugar with pectin added. I have always had trouble getting strawberry jam to set, but I used jam sugar last week and I was really pleased with it. The recipe is on the pack. 800g strawberries to 1kg sugar.
It is very difficult to set. You should add either gooseberries or pectin. Gooseberries have a great deal of pectin, and make very little difference to the flavour of the jam, but strawberries alone will not result in a decent set.

Well folks it's made - and appears to have set pretty well! It's maybe a little runnier than other jam I've made before but it's set nonetheless! Thanks for all your help x
My friend has just given me a jar of her strawberry jam, it is a bit runnier than others but it is lovely, couldn't resist it on new bread.
1.4kg of strawberries takes 1.4kg of jam sugar and 1/2-1 lemon juiced. The jam sugar already has the pectin in it so no need to add any more.
If you have a breadmaker you can make jam in that! I did and it was lovely.

I've made 2 dozen scones and just about to put my granny's old cast iron griddle on to make soda farls - there won't be much jam left by tea time!!
Oooh scones!! yummmm
btw be careful if cooking on a ceramic or induction hob top as I messed up mine when I spilt the tinyest of hot jam, you have to wipe it up imediately
Off to make some scones now.
