Afternoon.

Today I'd like your soup recipe suggestions.

I do a pretty rockin' tomato & basil soup.

But there's only so much tomato soup one gnome can consume.

So, if you'd kindly offer me your favourite soup recipes which are something-other-than-tomato.

Preference would be for vegtable soups in the main, but all suggestions are of course, welcome.

Ed - thanks for letting me know. I am the original soup dragon and can make soup out of anything.
My ultimate favourite soup is smoked haddock chowder

1 large potato, peeled & diced
1 onion, peeled & diced
Veg stock
Large tin of sweetcorn blitzed in the blender OR a large can of creamed sweetcorn
Pkt smoked haddock, flaked
Seasoning

Cauliflower and white Stilton.
Pea and ham.

Carrot and coriander.
Sweet potato & coconut soup

Sweet potato(es), peeled & diced
Veg stock
Tin of coconut milk

Cook the sweet potato in a little veg stock til tender. Blitz in a blender. Add the coconut milk, reheat & serve
Bag of value frozen veggies in a pot, stock cube of choice - I always use chicken.
Bring to a simmer until cooked 20 mins should do it - blitz and season - chuck in any left over meat - I have used lamb, gammon and chicken in this all tastes lovely - freezes well and heats in the micro.
Courgettes often in good supply and make a good soup with most things, though they have little taste of their own
Spicy butternut squash soup is yum!

Lentil and carrot soup, whizzed up in a blender until it's creamy, then mix in a little brandy and a swirl of fromage frais to serve.

Or borscht is pretty yummy and also easy to make.
Cauli and Stilton

Cook cauliflower including most of the green leaves in a good veg stock.

In a separate pan soften a few spring onions in a little olive oil.

Liduidise everything, and as you reheat add crumbled white Stilton and seaning to taste.

Ed, it is dead simple & scrummy BUT use the bare minimum of stock as you have your main liquid from the coconut milk.
I forgot to mention to season it.

Curried Parsnip And Apple Soup
50g Unsalted butter
1 Tbs Olive oil
2 Large onions, chopped
2 Garlic cloves, chopped
1 Tsp Ground cumin
Sea salt and freshly ground black pepper, to taste
1 Tsp Curry powder
1/2 Tsp Ground ginger
700g Parsnips, peeled and chopped
1 Medium Bramley, peeled and chopped
2 Tbs Runny honey
1.5l Vegetable or chicken stock

. Heat the butter and oil in a large heavy-based pan until the butter begins to foam. Stir in the onions and garlic and cook for 2 minutes to soften.
2. Add the ground cumin, the curry powder and ground ginger. Stir until fragrant.
3. Add the parsnips, apple and honey and cook for a few minutes. Pour in the stock, bring to a boil, then reduce the heat to simmer for 20 minutes until the parsnips are cooked.
4. In batches, whiz the soup in a blender until smooth and return to the pan. Season with salt and pepper to taste and reheat before serving.

We had it in a beautiful little restaurant in Pisa a few years ago and Mrs D has been making it ever since.
this is so yummy, CREAMY VEGETABLE SOUP
1tsp.of olive oil
2 ozs onion,chopped
2 ozs celery
2 ozs carrot
1 clove garlic
1 med.size baked potatoe(around 180g.or 7 ozs)
1/2 pint veg. stock
1 pinch mixed herbs
2 oz garden peas
125 mls semi skimmed ,milk
heat oil in pan,add onion,celery and carrot,cover and cook gently for 10-15 mts.
add diced pots.stock and herbs,bring to boil and simmer for 20 mins. add peas and milk,bring back to simmer,you can liquidise half the soup and stir back into the rest before serving.

Veggie Soup (not completely veggie)
Boil a marrow bone. Skim the fat
Boil a lamb shank, ditto,
Simmer leeks, carrots, potatoes and onions, add the stock, a beef stock cube and the meat from the lamb shank. Oh and turnip and a dash of parsley.

My recipe for lentil soup is one I'm keeping to meself.
MINESTRONE SOUP

For a stockpot the base is 4 tins of chopped tomato and 1 bottle of concentrated chicken bouillon (the one I use is Knorr ‘Touch of Taste’).

Then the following in whatever quantities you wish:- Peas / Green Beans / Carrot / Onion / Leek / Courgette / Broccoli / Red Pepper / Celery / Spaghetti (pieces about 20cm long) / Salt and Pepper to taste and for this size of pot about three tablespoons of sugar.

Cook any frozen veg in water in the microwave for 10 mins on full power and then strain before adding to the pot.

Bring to the boil and simmer for 45 minutes adding the spaghetti 30 minutes approximately before serving / freezing.

It helps greatly to invest in The Authentic V-slicer (about £25). If you don’t the preparation time is lengthy.
