I have bought some rather lovely looking scallops this morning from Waitrose. I have looked on various websites with regards to how long they need to cook.

One website says get the pan absolutely hot hot hot and only cook them for approx 30 secon each side otherwise they will go rubbery and the other website says 1-3 minutes each side, which are two vast differences in the timings.

Any suggestions?

pan smoking hot 30secons to 45 each side is how i cook them but it depends onf the size.

as they cook you should see the colour change slightly on the outside of the scallop.

Yes ... really fast, just to sear each side.
Yep - thats how I cook 'em...with a dash of balsamic vinegar when they're finished.

Do I cook them "dry" or splash a little olive oil/butter whilst the pan is heating up?
Butter with a bit of black pepper works well. And I agree with everyone else about cooking them really fast in a very hot pan. Otherwise you'll be chewing them all evening.
A drop of olive oil and a bit of. Utter the oil stops the butter burning and fresh black pepper is a must

Hi Duncer, I havent made it yet as OH is still out on the combine. I'm cooking the scallops with fresh penne pasta and mixing the cooked pasta with a little butter and a chunk of Stilton to melt into it together with a nice bottle of Chardonnay. It's fair to say that I'm definately looking forward to OH getting home as I'm hungry for it now.
If he doesn't hurry up can you DHL it to me please?

At last, an explanation as to why the only time I tried scallops they were awful. I'm tempted to try again now.

Oh do it Canary, I love scallops with black pudding and a pea purée... Yum!
I'll be sitting up waiting.......and drooling.
Apparently, you are supposed to put them in the pan like a clock face so you know which order to turn them over. (Never actually cooked them but watch cookery programmes.)
Flash them Kat and no more, as they will also cook against the heat of your hot pasta......serve straight away when you go for it.
