Making butter is supposed to be really easy...so there's no reason for it not to be viable.

I made butter once - inadvertantly! I was whisking cream and got carried away hey presto! Butter!
You can buy rennet and so forth at Lakeland for making cheese etc.

viable in what way? To be cost effective you need access to plenty of cheap milk.
