pomegranate concentrate

ive been looking for recipes to make chicken or lamb with pomegranate sauce and every one ive found says so many fluid ounces of pomegranate juice, i have concentrate.... how much would i need to use if the recipe says for example 16 fl oz pomegranate juice? would 4 tbsp be enough or would i need more/less? thanks

When I make pomegranate molasses I reduce to a third of the original amount, so if you're recipe calls for 16fl oz then I'd use around 5fl oz.

thanks eccles :) i guess once ive made it i can adjust next time if its not to my taste....

can i pick your brain while you are here? do you know how i work out tamarind? recipes always seem to say tamarind paste and i have that but also a solid block of it.... how much would i need off block to equal say 4tbsp paste? thanks
Mmm, good question! A couple of ounces is typical for a curry serving 6 people and that will probably give you about 4tbs

Having said that I find doing it from scratch it is stronger than the Bart's Tamarind Paste.

I like tamarind raita, just add tamarind paste to yogurt.

hmm that sounds nice, i made tamarind chutney the other day it was lovely

have a look in asian or middle eastern store if theres one near you, the ones in the big towns round here are really cheap, big bags of spices are dirt cheap too
You are so right, you must be daft to buy spices in the supermarket!

I'm awash with Indian, Chinese & Thai grocers.....trying to find a Mid East one is impossible.....hence having to make my own pomegranate molasses.
greets from the states.....a pomegranate reduction is what willie harcourt cooze used for his pomegranate semi-freddo (it could have been a 50% reduction)....didnt gordon mention it in the form of a "pomegranate gravy" (AKA reduction) in his ultimate cooking course.....

no such luck with thai or chinese or oriental shops wound here...there are days we are lucky to have aldi's..LOL

hi danoid and thanks for that ..LOL at the aldi, i live a 20 min bus ride from town and in a couple of mins walking distance theres 4 i think middle eastern type shops but no oriental ones and just out of town theres a big asian corner shop that sells everything you need really cheap too, shame its a 15 min walk from the bus stop now its getting colder though lol

aww wish i knew that earlier i love them. My ex used to laugh at the pomegranates over here, he said they were so tiny you had to have at least 3 to make up the size of them back home lol
