I need a recipe for a sponge that is to be iced with sugar paste icing. The cakes i make always come out of the oven lovely and light but i really don't think that it would stand up to the icing. So i need a recipe for a cake that is more dense in texture.
My daughter makes 3D cakes, she uses her gran's recipe which is
Weigh your eggs then use that weight for your flour, sugar and butter or stork. She makes in advance and freezes the sponges, takes them out, lets them defrost a little, then carves and ices.
Happy baking
The answers is us a CAKE mix not a sponge mix and cover with a thin layer of Marzipan before icing, don't for get to soak it with a little stock syrup to keep it moist.
