We are having rib of beef tonight (on the bone) How can I cook it perfectly,its a real treat so don't want to mess it up.

Of courseI've got a bottle(or) two of red.And for dessert Syrup sponge and Clotted cream and golden syrup ice cream.I can't remember the last time we had rib at home,it was expensive but what the hell. Incidentally he will be away for Christmas and our silver wedding anniversary so we have to enjoy the next few weeks.
