Will a plain Victoria sponge cake go ok with white choc? i.e. melted choc in middle, coated in melted choc then shards of white choc going up the sides; the person I’m making it for opted for this as she felt a white choc sponge cake would be too sweet with all the other choc stuff going on – but I’m dubious whether it will ‘go’ together – I’m actually an avid hater of white choc, so I’m probably not the best person to decide, so you’re opinions will be appreciated.

are you saying all white chocolate and only melted chocolate to fill it?I think that would be very sickly and dry. I would suggest a ganache filling if she insists on white chocolate filling (mixed melted chocolate and cream) and some added strongish flavouring in the sponge. I am not fond of white chocolate myself :-(
it will make the cake impossible to cut - when the white chocolate hardens, you really wont be able to cut the cake
ice with modelling chocolate with added flavouring?

You could do as woof suggested and make a white chocolate ganache to fill and ice it. I would also be inclined to add some fresh raspberries in the middle to cut through the sweetness.
