Before I went to bed last night I took out of the freezer what I thought was a small joint of beef. Went to the fridge to get it ready to be cooked and it's duck giblets...

Don't throw them - its wasteful.
If you have four more and the liver is there make a small pot of duck liver pâté.
Delicious!
Or just enjoy the pan fried liver.
Making stock is always something I plan to do but when I have say, a chicken carcass, I never seem to have the rest of the ingredients, so I always end up binning it.
A chicken carcass with a pinch of salt and pepper will still make good stock, better with an onion and a stick of celery, but to just bin it? ........Ummmm!
