I have heard of frying green tomatoes but never done it till today, I had a bowlfull of tiny ones in the fridge so fried them when I did the sausages, they made a lovely tangy side dish with my bangers and mash, have you ever tried these? I ask because when I told my nieghbour she pulled a face and sad "yuk how horrible" but they were amazing.
They also make excellent canned raspberry jam. Very simple...
4 cups of green tomatoes (shredded... we use a food processor but not to thin)
4 cups sugar
1- 6 ounce package raspberry jello gelatin (or whatever you're brand you have in the UK.)
Combine tomatoes and sugar in a large enough sauce pan and bring to a boil. Boil for 10 minutes. Add gelatin and simmer for 20 minutes. Meanwhile, sterilize about 10 or 12 1/2 pint jelly jars then spoon enough of the prepared mixture to come within 1/2 inch of the top of each jar... seal and store.
As a hint, we add a few drops of red food coloring to the mixture to achieve a darker red color in the jar. Additionally, you can substitute strawberry gelatin if you'd like...
i bought a punnet of various types of tomatoes, it had orange, yellow, deep purple and even ones that looked like a little watermelon - green and stripey - they were all lovely
its so nice to know there is so much that can be done with them, we had a lot this year due to no sun, and all i've ever done with them is make chutney and try to ripen them, but all they did was to go wrinkly this year, they did'nt keep well at all, will definately try the jam next year, thanks everyone.
