I used to make a lemon and kiwi baked cheesecake.
50g butter, 225g digestive biscuits, 25g caster sugar, one tablespoon of ground cinnamon - for the filling 2 eggs, seperated, 100g caster sugar, a tub of soft cheese (about 350g) the juice and zest of 1 lemon, 1 or 2 kiwi's, 150ml double cream.
melt butter and mix in the biscuit crumbs, sugar and cinnamon. Press mixture into a losse bottomed tin, then pop into fridge.
For filling, beat the egg yolks with the sugar until thick, then mix in the lemon rind and juice and the cheese. Whisk the egg whites then fold into the mixture. Whip the cream until it is quite stiff and again fold into the mixture. Peel the kiwis and slice thinly. Spoon all filling into the base and pop in oven at 160 degrees C for about an hour. Leave the cheesecake to cool down in the oven, and chill before serving.
I'm not a great cook, but I always manage to pull this one off!
