And especially if you go for baby ones:
Portugese Squid for 2 - 3 persons
Very small squid (1 pound)
Olive oil
Onion, sliced
Garlic, chopped
2 slices thick bacon
Red and white wine
Chilli pepper
Parsley, chopped
Clean them - you don't have to remove their “pens”.
Heat some olive oil in a casserole and add some sliced onion and chopped garlic and then a few small bits of bacon.
Add the squid, both red and white wine, chopped chilli pepper and chopped parsley.
Let this all bubble away for a while; the squid take on a nice purple colour. When you hit this stage you are done.
When they are tender serve them with their juices.
The Portuguese serve their squid with potatoes at one end of the platter and steamed rice at the other.
