Lasagne
I want to make a lasagane for visitors next week, however I will not have time to make it the same day. Would you make it and freeze it, if so would you defrost or cook from frozen. I just wondered about freezing the cheese sauce. Or, can I make it a couple of days, keep in fridge, and then cook on day needed. Thank you.

For more on marking an answer as the "Best Answer", please visit our FAQ.I'd make the ragu (meat sauce) up and keep it in the fridge, and then make the dish up on the day with a freshly made cheese sauce. If you make it up and leave it the pasta will go like wallpaper paste, so its either freeze it or do as I said first. Remember to cover the sauce well in th fridge else everyhing will smell of garlic!
I would definiately make the meat sauce a day ahead and fridge it, assemble on day (10 minutes max including making either a packet or from scratch cheese/bechamel sauce, or cheat and buy a jar) and cook on day and eat fresh.
You can make and cook in advance and freeze and reheat, but in my experience this can make it a little dry ...... always better to go fresh and reheating from frozen versus cooking fresh will be very little difference in time anyway. Hope it's delicious - sure it will be!
