125g softened butter

60g brown sugar

110g caster sugar

1 tsp orange rind or 1/2 tsp vanilla essence

1 medium egg

225g self raising flour / plain flour, sifted

(If using plain flour one 5ml teaspoon of baking powder is needed)

1/4 salt

180g chocolate chips

Pre-heat oven to 160 degrees celcius.

cream butter with both types of sugar and orange rind or vanilla essence until creamy.

Mix in egg thoroughly.

Mix in flour and salt (don't forget the baking powder if using plain flour).

Add chocolate chips.

Place small tablespoonsful of the mixture 2cm apart on a buttered oven tray and bake in the pre-heated oven for about 8-10 minutes.

Remove from oven and leave to cool on the oven tray for 2 minutes before transferring to a cake rack.  Store in an airtight container.

I made this recipe for my daughter's school fete cake stall.  It has made over 28 biscuits so i've been able to put some back for my kids at home.

I hope you enjoy them.

I'll be trying these at the weekend.
thanks!

Ssshhhh ! Don't tell hellywellywo, but I just pinched one of her cookies while she was busy typing out the recipe !

Mmmm.... scoff scoff

I'm off to make them now, have nearly all the ingredients but I'll subsitute Chocolate covered peanut for the chips and go for the vanilla option. Thanks!
In the oven now.......I can't wait!
Just had a peek at the first batch - will need to spread them out a bit further next time! Looking good though!
Its unbearable waiting for them to cool!
My goodness they are good - I recommend them to all!

Consider yourself told.
Hello this sounds great and I will be trying it but am I being a bit dense because you say '1/4 salt'.. a 1/4 of what? a teaspoon? sorry!
Question Author

sorry kazzee69 yes it is 1/4 teaspoon salt.  Soz about that little mistake there everyone.  lol :)

PS. hinge1967 are they nice with chocolate covered peanuts instead of plain old chocolate chips.  my husband isn't a big fan of anything chocolatey so i'm looking for other alternatives.  I was having a wonder about maybe jelly tots, dolly mixtures or maybe jelly babies.  Or would they just burn and melt?  Any thoughts would be most welcome.

To be honest I think they'd just burn and melt. I think raisins would be nice or chopped nuts or cherries. Yum.
