I'm looking for a light lunch meal for easter Sunday. We'll be having a lamb meal for dinner but would like some suggestions for something festive for lunch but only light. Any suggestions?

cheese soufflé and a green salad?
Chocolate?
Easter Eggs
Bottle of white wine and nibbles should suffice. you don't want 'em too full up before that main meal.

Ham seems traditional for Easter to me (although I'm not really sure why!).

Perhaps a ham salad, or gammon & pineapple (which even I can cook)?

A nice cheesecake to follow might be a good idea.



For me.
Breakfast, a cup of tea and a fag.
Lunch another cup of tea and a fag.
Dinner, a small amount of meat or fish with loads of veg and a small beer.
Supper, a Bacardi and coke.
When I read the Sunday dinner threads on here I know why we have a obesity problem.
Martha Stewart recipe:

3 tablespoons unsalted butter, plus more for dishes
3 tablespoons all-purpose flour, plus more for dusting
1/4 pint whole milk, warm
4 ounces firm aged goat cheese, grated or coarsely chopped (can use a young one but cut back the salt below)
1/4 teaspoon ground nutmeg
1 teaspoon coarse sea salt
1/4 teaspoon freshly ground pepper
4 large eggs, separated

Directions

Preheat oven to 375f 190C. Butter four 1/2 pt souffle dishes. Dust with flour, and tap out excess.

Melt butter in a saucepan over medium heat. Sprinkle flour over top, and cook, whisking, for 1 1/2 minutes. Add milk, cheese, nutmeg, salt, and pepper.

Cook, whisking, until thickened, about 3 minutes. Remove from heat. Whisk in yolks.

Beat egg whites until stiff peaks form.

Gently fold cheese mixture into whites. Divide among souffle dishes, filling to 1 inch from top.

Place on a baking sheet, and bake until puffed and golden, 12 to 15 minutes. Serve immediately.
In nigella's book 'feast' she goes for a light lunch of kedgeree risotto.
Sainsbury`s magazine (available online www.sainsburysmagazine.co.uk/recipes/5) has a recipe for Three veg frittata with goats` cheese which looks nice. I`d probably serve it with lambs lettuce (and I would substitute basil for the mint)
Souffle mushroom omelette with a green salad
Any of these ideas with eggs would be light and festive.

Thank you for all those ideas. That soufflé does sound good but as I haven't ever made one I'll have to have a go first!

Didn't think of eggs and they're so easter festive.
How about a Tapas style buffet? Mix bought Tapas with homemade stuffed eggs, olives, meat and cheese platter and a couple of different types of rustic bread.

Jeza...very interesting but have you given any thought as to what might be causing the nationwide lung cancer problem ?

None of my business I suppose but substituting cornflakes for your "fag" might not be such a bad idea !

Or Shredded Wheat perhaps.

Better than "fags" surely ?
Coccinelle , gamon joints are on offer at Sainsburys so why not cook one the day before and serve it cold with a salad. No cooking on the day and everyone can eat as much or as little as the like and you will hav left overs for sanwiches ,breakfast (ham and eggs ) or add chips and you have a dinner .

nannybooby thanks for your suggestion but a Sainsbury's is a long way away from me... I'm in France! I wasn't really looking for a meat meal as we'll be having one in the evening. I'd usually go for a quiche and salad but wanted something with an Easter twist. The stuffed eggs are a good idea.
