Has anyone else found that bacon is becoming a lot more saltier to the taste or, is it just us losing certain parts of our taste buds, as we become ancient??

The reason why bacon does not have any flavour is because it is too lean. When you had more fat on a side of bacon ,it had a better taste. Then the injection of about 15% of water does not help.

No can't say I've noticed..
I haven't noticed either. But I now have a craving for a bacon sandwich
Mmmmmmmm.......Bacon. Can't beat a bacon sarnie. Chuck in a fried egg and I'm in heaven. I only go for unsmoked these days, smoked is far too salty.
I have found that the cheaper bacon has more water and leaves an unpleasant salty aftertaste. It is worth splurging and buying the better quality bacon for a treat!

I certainly find bacon doesnt have the flavour it used to have, the only bacon I find is worth eating these days is smoked and I have tried lots of different suppliers. Im now looking into curing my own bacon.
I dont have bacon often, but always buy smoked, and a good quality packet!
The cheaper stuff just shrinks and has no taste.

Tony, you just buy a joint rub it with salt and demerera and leave it a few weeks and hey presto!

Go to youtube for a more detailed instructions, its not difficult though, maybe the finer details take a bit of time to refine, ive not tried it yet.
Mamyalynne, I know what your saying, I bout two fish the other day, it said "cured" on the packet but they were definitely dead!!

I find it a lot saltier, and I buy from a pork butcher. Must ask next time i'm in.

Did anyone see Sunday Brunch last Sunday?

This Master Bacon bloke (great job) had different flavoured bacons, sweet chilli, beetroot and black pepper, they hadn't just been coated with the flavour he had cured them. Tim and Simon loved them.

Think I could be tempted, i've a feeling they're coming our way soon anyway, hope so .

Thanks to you all for the edification. Now looking to see if there's a bacon curer in Hampshire.
We buy bacon direct from the butcher these days - no more wet supermarket bacon for us.
go for Sainsburys unsmoked - you will recognise it cos there are only 4 slices. But very nice
Love thick sliced bacon. No butcher locally!
daisy nonna it is in sainsburys and because it is thick - you dont get water or it shrivveling like a prune
For the best bacon in the world go to Emmetts in Peasenhall or Pinney's at Orford, both in Suffolk. Their Suffolk black back is second to none and has that all-important layer of fat. Failing either of those, buy dry-cured bacon from the supermarket - none of that horrid white gunge.
