Has anyone got a recipe for oatmeal biscuits?  (sweet ones)  I am looking for a biccie that is not too chewy and not too crispy either, but just a nice consistency with maybe a bit of coconut in it.  I love a flaky one, when your mouth waters (like mine is now!) as you open the tin and know that you will have a "moment" with your cuppa and your biccie... I better stop drooling... But I am serious about the recipe!! Thanks!

We like this one because it has chocolate chips...

It is, however, a cookie recipe.  Kids especially like it since it's baked all in one and they can break off the size pieces they like...

1/2 C. butter, softened

1/2 C. firmly packed brown sugar

1/4 C. granulated sugar

1 egg

1 t. vanilla

3/4 C. all-purpose flour

1/2 t. baking soda

1/4 t. salt

1 1/2 C. oats, quick or old-fashioned, uncooked

1 C. semisweet chocolate chips

Heat oven to 350� F.

In large bowl, beat butter and sugars with electric mixer until creamy. Add egg and vanilla; beat well. In small bowl, combine flour, baking soda and salt. Add to butter mixture; mix well. Stir in oats and chocolate chips; mix well.

Press dough evenly into bottom of 10-inch nonstick ovenproof skillet. Bake 20 minutes or until top is lightly browned (do not overbake as cookie will continue to bake after it is removed from oven). Cool about 10 minutes.

Cut into 8 to 16 wedges. Serve with ice cream and caramel topping or chocolate syrup, if desired.

BTW, we cook our in a slightly  greased black cast iron skillet... well seasoned... Enjoy!

Try these - easy to make and so moreish -

Melting Moments
5oz TREX
3oz marg or butter
6oz caster sugar
10oz self raising flour (or 5oz s r flour, 5oz ground almonds)
1 egg
Vanilla essence
Oats
Cherries for decoration

Cream fat and sugar together, beat in egg, work in flour and essence. Roll into balls with wet hands and coat with oats and press out slightly. Place 1/4 glace cherry in middle of each one. Cook in moderate oven (350f, 180C) for 15-20 mins. Cool slightly before removing from tin.
These are nice
Apricot and sunflower flapjacks
125gm marge
125gm demerara sugar
tablespoon golden syrup
175gm rolled oats
50gm no-soak dried apricots snipped into small bits
50gm sunflower seeds

preheat the oven 160C or gas mark 3
grease a 7inch shallow cake tin Put the marge ,sugar,golden syrup in a saucepan and melt on low heat.stir in the apricots sunflower seeds and mix well. Turn into the tin and and level the surface. Bake for about 35 mins until golden brown. Leave to cool for about 10 mins ,mark them into about 8 bars,lift out with a palette knife and leave to cool completely on wire tray.

By the way the melting moments sound delish and am going to give these a try.
P.S forgot to say stir in the oats with the apricots etc.
