looking for a recipe for chilli/pepper sauce. This is the type of sauce you shake over stuff like spaghetti bolognese to give it a bit of zing. Like tabasco sauce.
I have a commercial bought bottle my wife picked up in Cape Town. The ingredient list are; Chillies, Garlic, Spices & Vinegar.
I'm guessing vinegar is the base liquid but would like to see opinions on what spices are used and how to prepare it.
How about Google for "arrabbiata sauce"? The vinegar sounds a bit strange, unless it gives a Tabasco-like flavour to the sauce. Even then I'd prefer to leave it out.
I've had a google for that Heathfield; it does seem to be more tomato based though - like a complete pasta sauce.
This is more of a condiment. I have since posting this question something along the lines of what this could be. Wonder if anyone has made something similar or knows a better recipe?
At home, I have a few bottles of Bajan Hot Pepper Sauce (Delish brand). The ingredients on the back are:- mustard, hot peppers, onions, starch, vinegar and tumeric. I`m guessing the mustard is in powder form. The sauce is great though and very hot. Maybe you could try different quantities of the ingredients until it tastes as you would like.
I`ve got some peri peri from SA which is a brand called Very Peri (the very hot version). It`s extremely hot. It`s Portuguese in origin (piri-piri), My recipe book says:-
10 fresh hot red chillies, seeded and chopped
100ml olive oil
1/2 teaspoon oregano leaves
Juice of 1 lemon or lime
Salt to taste
1. Chop the chillies in a liquidiser or food processor
2. Add the remaining ingredients and process to a smooth sauce.
Fairly straight forward really. Personally, I prefer the Bajan one which is as widely used as pepper and salt in Barbados.
1/2 cup white wine vinegar
1/2 cup oil
1/2 tbspn Worcester sauce
1 tsp crushed garlic
3tsp salt
1tsp paprika
1/2 tsp mustard powder
2 tsp peri peri powder (chilli powder)
Mix, stand 24 hours, use as marinade or slosh!
I have no idea what has been posted in my last post but as it hasn't worked try googling sambal oelek recipes, one from food.com should come up which is pretty much as you have described.
thanks all. Definitely some ideas to try out and tinker with. I'm growing some chillies on the windowsill so will put them to good use when/if they fruit!
