Microwaves with an inverter (usually dearer models) are more flexible than ordinary "magnetron" types. You can fine-tune temperatures for example. Definitely not for just re-heating stuff!

I'm unsure since I know inverters as being a type of power system whereby the incoming mains is chopped up to create a very high frequency source of power, which allows the transformers to be smaller and more efficient, and I guess more controllable ? But I'm dragging my brain for information I knew decades ago, so :-) I'm thinking that maybe that is related in a microwave to make the power supplied to the food via the microwaves more controllable ?
