meals on hot sunny days

There are only so many ways with salad, has anyone got any tips on evening meals when the weather is hot and sunny. Thanks.

How about some hummus? Just slap the following in a blender:

  • Jar of top-quality chickpeas, drained
  • Tahini
  • Garlic
  • Olive oil
  • Lemon juice
  • Salt, pepper, ground cumin, Turkish pul biber is good if you can get hold of it (otherwise ceyenne pepper or peperoncino). A dash of roasted sesame oil is my secret weapon here, but use sparingly.

You may have to add a little water depending on the viscosity of the tahini. You can serve this on its own or with strips of grilled chicken or bits of lamb, and/or garnish with tomato and cucumber.

You can't beat a BBQ in my opinion. Get a disposable to save on washing up ;o)
Jacket potato with a cold filling instead of a hot one like tuna or chicken with mayo, sweetcorn & peppers.
Corn on the cob, perhaps?  You can either cook it inside (in boiling water), or outside on the grill.  Smother it in butter and salt and enjoy!  Extra yummy when accompanied by cantelope or watermelon.
Tin mixed bean salad from Sainsburys, tin of tuna. Mix in a bowl with or without mayo. Great with buttered french bread or with lots of chopped salad stuff in a pitta, or in jacket potato.  Very healthy without the mayo.
Proscuitto wrapped around cooked asparagus stalks or proscuitto and shrimp skewers on the BBQ with nice crusty bread?  Oh...and salad....:)
