mrs cuddles is bringing home a bacon joint having never cooked one before what would be the best way to cook it please?

Simmer for a few minutes and then throw the water away, so it gets rid of some of the salt. You can then start again to simmer it in fresh water until done, or roast it.
But these days, I'd prefer to slice a couple of steaks off it and grill them, and either freeze the rest whole, or sliced into more steaks.
