Aubergine?

does anybody have a favourite simple aubergine recipe where aubergine is the main ingredient and which also doesn't contain cheese or garlic please?

I love avocado-tomato stuffed aubergine rolls! Simply slice the aubergine, put some oil, salt and pepper on them and put them in the oven for about 20 minutes. Then put guacamole on them and roll them.

I can't help looking on aubergines as one of those foods that people ate because they had no choice. It was that or nothing. Blechhh!

in the end I junked it. Sis has eaten it and says it tastes of naff all.
