seen a deal on groupon for a ham shoulder. It states it needs no special preservation, not even cold. How long do you think you would have to eat it in once it's been cut?
I'd think months. You see whole iberico hams in Spanish supermarkets not in the chilled area and hanging in restaurants. As they only eat a few slices at a time I think they leave them hanging for ages. It is already fully preserved when you buy it - if it's the proper stuff.
Slice it thinly when you want it and keep the rest covered with greaseproof paper and cling film. We keep whole proscuittos and un-cut, they last ages. Once cut, they will still last a month or so. Ours never last that long!!
