seen a deal on groupon for a ham shoulder. It states it needs no special preservation, not even cold. How long do you think you would have to eat it in once it's been cut?

I saw that offer & wondered the same. Answers required pretty sharpish please!
I'd think months.You see whole iberico hams in Spanish supermarkets not in the chilled area and hanging in restaurants.As they only eat a few slices at a time I think they leave them hanging for ages. It is already fully preserved when you buy it - if it's the proper stuff.
Slice it thinly when you want it and keep the rest covered with greaseproof paper and cling film. We keep whole proscuittos and un-cut, they last ages. Once cut, they will still last a month or so. Ours never last that long!!
Doesn't it keep for ages? Spanish butchers have them hanging up in the shops, they just cut a bit off when you want to buy some.

As you may well know, there are different qualities and a wide range of prices.

i don't think it's that one. I'm just trying to work out if it's good value or not. i seem to recall a previous convo about pata negra!
