Loaf Style Cakes

I have got a silicone loaf baking mould and am keen to try it out.
I'm not too keen on loaf type cakes but thought it would be nice to make something for my colleagues at work and a loaf style bake would be much easier than a more traditional cake or buns as they have to travel on two buses to get there.
Has anyone got any simple tasty recipes that I could try? Preferably with not too faffy ingredients as I don't want to be left with stuff I can't then use up, especially if it needs using quickly and can't be stored.

You can also do a choc refrigerator cake in the loaf mould:
200g digestive biscuits
150g butter
200g mixed nuts, chopped (I use pistachios and pecans but you can use anything)
2 tbsp golden syrup
200g chocolate...can be milk or dark
I also add smashed up malteasers and crunchies if I have them
-Line your mould with clingfilm.
-Break up the biscuits into a bowl. Add the nuts and malteasers and crunchies if using them.
- Melt the butter, chocolate and golden syrup in a pan over a low heat until everything has melted.
-Mix the chocolate, biscuits and nuts together. Pour into the mould and put in the fridge until it sets. (I leave it overnight)
- Cut into slices. Store in an airtight container out of the fridge (ironically!) x

Lots of possibilities :) I need to make sure I'm no longer infectious but be good to get baking again.
I've been watching Next Great Baker (I think it's called that, with the guy from Cake Boss) and Cake Boss and am feeling a little inspired but figured I'd start on something simpler, I can bake, just not much for a long time - pissed me off I couldn't mix properly until I discovered my electric whisk/mixer thing :)
Getting proper cakes into work is just too much faff!
