Will a few drops of vanilla/vanilla essence work as well as (the very expensive!) vanilla pod when making crème broulee?

The essence isn't really that good. You really want vanilla extract - which actually comes from vanilla.

Proper vanilla extract will be fine. Vanilla "flavouring" won't. And by the way it's "brulée" (can't do the circumflex!)

Try adding Amaretto or Baileys as a flavouring instead of Vanilla.
