I'm thinking of making some of these - http://www.heatherlikesfood.com/sweet-ham-and-swiss-sliders/

but I am a bit worried that they might be greasy/sloppy. Any thoughts?

It should be okay.

I used to melt cheese on un-toasted rolls and they came out fine.
I think they'll be okay too.

Must admit though, I think I'd leave out the butter, 8 tbsp is quite a lot.
