Chilli Con Carne....good Easy Spicey Recipe , Anyone ?

i want to make chilli con carne, as allways im looking at youtube vids to get ideas. but most youtube cooking vids are of american people who love to ramble on and most probably havent a clue how to cook...... LOL

in your view what is the easiest way to make it, really spicey. my sister made it for me last time and she put baked beans into it, it was lovely !!!

Well...those Americans who like to ramble just might have some *authentic* recipes to get ideas from...seeing as how chilli con carne originated there.....just a thought.
I prefer to put red kidney beans in it. Delicious..

Most recipes call for mince. Try it instead with rump steak diced into 2 to 3 cm pieces. Far superior. I'd advocate kidney beans every time, since the sauce from baked beans tends to detract from the final flavour of a good meaty chilli.
Eccles link is quite similar to the chilli I used to cook in a pub in Brooklyn,NY many years ago. I'd use both chilli powder and cayenne pepper,leave out the red pepper and sugar,and add smoked paprika if you have it. I'd also offer grated cheddar along with the soured cream. The longer you can leave it to simmer away,the better the flavours will be...and no baked beans please!
It will also have more flavour if you use mince with a bit of fat in it.
I always add a generous splash of tobasco and Worcester sauces, along with a stock cube.
Start off with a basic tomato sauce- a tin of tomatoes, a couple of finely chopped onions and a crushed clove of garlic. Add as much or as little finely chopped chilli as you like, chuck in a can of kidney beans and some browned minced beef. Simmer gently until most of the liquid has evaporated and you are left with a lovely thick, spicy tomato sauce. Melt a couple of squares of dark chocolate (don't be tempted to use milk chocolate) just before the end of cooking and stir to make sure it's properly mixed in. Bon Appetit!

Chocolate in chilli comes from Mexico...it has to be bitter chocolate.

I said the same -yuk - to the chocolate before I tasted it. But try it, it is truly amazing the difference it makes to the finished dish, even if you use a packet mix. It doesn't make the dish taste of chocolate at all, it just makes the flavour somehow more deep and rounded. It's delicious!

Think unsweetened cocoa rather than dairy milk, like dipping your finger in a packet of cocoa powder. And only add one or two chunks of very, very dark chocolate to the whole pan.
I'm amused that the link I gave has an image of a chilli with chocolate melting into it but no chocolate is mentioned in the ingredients or method, sloppy editing!

If I was going to make a mince based chilli con carne I would use something along the lines of my link with the modifications Pasta cited.

However I usually make Chilli Colorado which is a different beast altogether.

What I would never do is pour a tin of baked beans into either, that thought makes my stomach churn :-(

This is my recipe, my son in law is a chef and he rates it highly!
500g lean mince
large onion chopped
2 cloves garlic chopped
beef stock cube
carton of passatta
tablespn tomato puree
good glug (technical term) ketchup
red pepper diced
3 teasps cumin powder
chilli powder according to taste
couple bay leaves
can red kidney beans.
Brown mince with onion,spices, pepper and garlic add rest of ingredients and simmer gently for an hour. I usually leave it overnight to let flavour develop. I'm sure a couple squares 70% chocolate added would be delicious!
